Gingersnaps
I love the smell in my kitchen when I make these cookies. It smells like Christmas. These spiced cookies have a crunchy exterior and soft middle. This year I’m giving the cookies away in these cute snowmen lunch boxes. Aren't they adorable? Enjoy!
Makes 3 dozen
Ingredients:
1/4 cup vegetable shortening
1/2 cup unsalted butter, soften
1 cup brown sugar, packed
1 egg, room temperature
1/3 cup molasses
2 1/4 cups all purpose flour
2 teaspoons baking soda
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon cloves
1/8 teaspoon nutmeg
1/4 teaspoon salt
Granulated sugar
Directions:
1. Mix together shortening, butter, brown sugar, egg and molasses.
2. Combine the flour, baking soda, ginger, cinnamon, cloves, nutmeg and salt. Blend the dry ingredients into the butter mixture until it forms dough. Chill the dough for at least an hour.
3. Pre-heat oven to 350F. Scoop out the dough and shape into 1 inch balls. Place balls 3 inches apart on a parchment lined baking sheet.
4. Flatten the balls slightly and sprinkle the tops with granulated sugar.
5. Bake for 10-12 minutes. Cool the cookies on the baking sheet for 2 minutes. Transfer them to a wire rack to cool completely.

Your gingersnaps look perfect!
Gingerbread is among my favorites, these look beautiful. You've been on quite the cookie fix since I've been away. Everything rocks :)
Just put the dough in the fridge and realized there is no oven temp. 350?
Thanks everyone! The lunchboxes are a hit. :)
Anonymous: The oven should be set to 375 for these cookies. Thanks for the heads up! :)
