Dragon's Roasted Herbed Potatoes

Serves: 6
5 lbs yukon gold potatoes, peeled and cut into 1 1/2 inch chunks
1 1/2 tablespoons Italian seasoning mix
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon pepper
1/4 cup butter, melted
Preheat oven to 475°. Combine all the ingredient. Bake the potatoes in a roasting pan or in a baking sheet until they are soft and have a caramelized crust on the bottom. This should take about 45 minutes - 1 hour.
