Roasted Red Pepper & Zesty Mini Pita Crisps
1 (12 oz) jar roasted red peppers, drained and rinsed
1 clove garlic
1 shallot, chopped
2 oz cream cheese, softened
2 oz good quality feta cheese, crumbled
1/4 tsp freshly ground pepper
1 pkg (200g) mini-pita rounds, white or whole wheat
2 tbsp olive oil
1/2 tsp kosher salt
1/4 tsp paprika
1/4 tsp cayenne pepper
In the bowl of a food processor, combine red peppers, garlic, and shallot. Process till smooth. Add cream cheese and feta cheese. Process until well combined. Season with freshly ground pepper. Transfer to bowl. Refrigerate until serving.
On a baking sheet, lay out mini pitas in single layer. Brush with olive oil, on one side. In a small bowl mix salt, paprika, cayenne pepper. Sprinkle on pitas. Bake at 350 degrees for about 10 minutes or until crisp. To keep pitas flat, bake with a second baking sheet placed on top sandwiching the pitas.
