Pork Chops with Apples, Pears and Maple Syrup

Pork, apples, pears and maple syrup are a wonderful flavour combination. These pork chops are so tender and savoury, you’ll be making them again and again. The key is to control your heat and not over cook them. If your pork chops are on the thin side, they will only need a couple of minutes in the oven. Enjoy!
Serves: 2
Ingredients:
2 pork chops
1 tablespoon olive oil
1 tablespoon butter
Pinch red pepper flakes or more to taste
Juice of 1/2 a lemon
1/4 cup apple cider
1/2 small onion, chopped
1/4 cup maple syrup
1 apple, peeled, chopped
1 pear, peeled, chopped
1 clove garlic, minced
1 teaspoon fresh rosemary, finely chopped
1 teaspoon fresh sage, finely chopped
Salt and pepper to taste
Directions:
1. Preheat the oven to 350F.
2. Season the pork chops with salt and pepper on both sides. Dredge each pork chop lightly in the flour.
3. In an ovenproof skillet over medium-high heat, heat oil, butter and red pepper flakes. When the butter is melted, place the chops into the pan. Brown the pork chops on both sides for about 2 minutes per side.
4. Remove the pork chops from the pan and keep warm. Deglaze the pan with the apple cider and lemon juice. Cook until the liquid has reduced by 1/2.
5. Add the onions and cook for 1 minute. Add apple, pear, garlic and maple syrup. Cook for another minute. Add the herbs and season with salt and pepper to taste.
6. Return the pork chops to the pan and put the whole pan into the oven to finish cooking. When the chops reach 145 degrees, remove the pan from the oven.
7. Serve with pork chops with the apple-pear sauce spooned on top.

You are right - the secret with pork chops is definitely not to overcook and dry them out. I think sweet fruity sauce should be compulsory with pork - precisely like yours!

Hello! Thank you very much for this recipe! I have 3kg of pork chops in my freezer and try to find some new ways to prepare them. I have made your recipe tonight and it is really great! I have added pancetta for nice salty crunch and replaced paprica flakes with smoked paprica - it really lifts up the sweetness of fruits. No sage though, forgot when shopping ;) Anyway to sum up - really lovely dish that we will repeat many times I believe :)THANKS :)
I've made this recipe 3 or 4 times now and still love it. It comes out a little differently each time, but that's because I don't do things consistently.
When I've made it, I use Apple Cider Vinegar instead of apple cider. It gives it a nice, sharp flavor that contrasts the fruit and maple syrup.
