Apple Cranberry Orange Crisp

Yesterday was a cold and rainy fall day. It was the perfect day to stay home, curl up by a fire and watch a movie. I invited some friends over to join me for a lazy afternoon. When they arrived they were greeted with the warm scents of apples and cinnamon. Who needs sunshine when you have this Apple Cranberry Orange crisp and a great movie? This crisp is sweetened with a combination of maple syrup and brown sugar. It was so warm and yummy. Enjoy!

Serves: 4

Ingredients:

Topping:
1/3 all purpose flour
3/4 cup rolled oats
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup unsalted butter, melted and cooled

Filling:
5 medium gala apples, peeled and sliced
2 cups fresh cranberries
1/2 cup maple syrup
1/4 cup brown sugar
2 tablespoons all purpose four
zest of a medium orange
2 tablespoons orange juice

Directions:

1. Preheat oven to 375°.

2. Combine flour, oats, brown sugar, cinnamon, salt and melted butter until well blended.

3. Butter a shallow baking dish.

4. Combine apples, cranberries, maple syrup, brown sugar, flour, zest and orange juice in large bowl and mix until combined. Add the apple mixture to the baking dish.

5. Crumble the topping over the apple mixture and cover the dish loosely with foil. Bake for 30 minutes. Remove the foil and bake for another 25-30 minutes or until the topping is golden brown.

6. Let stand for at least 15 minutes before serving. Serve with vanilla ice cream.

Mmm. The apple cranberry combo has gotten to be perennial around our house in the past few weeks, but I've not yet done a crisp. Great idea :) And how perfect is this treat for a movie afternoon??!!
