Carrots Glazed with Apple Juice, Honey and Thyme

I've been craving carrots all week and last night I gave into those cravings with these gorgeous little jewels. Apple, honey and thyme are a great compliments to the sweetness of the carrots.
Don't overcook the carrots as they will turn to mush. As a friend of mine says, "I like my carrots, like I like my women; sweet, with a little bit of bite and covered in honey". I have colourful friends. No? Enjoy!
Serves: 4
Ingredients
2 tablespoon butter
3 cups baby carrots
2 teaspoons honey
1 cup unsweetened apple juice
2 teaspoons fresh thyme, chopped
Salt and pepper
Directions:
1. Melt the butter over medium heat in a large skillet. Add the carrots and saute until the carrots just start to brown.
3. Add the honey, 1/2 of the thyme and apple juice. Bring it to a boil then reduce the heat to a simmer.
4. Simmer until carrots are tender and liquid is reduced to glaze, stirring occasionally, about 15 minutes. Add the remaining thyme and give the carrots a final mix.
5. Season to taste with salt and pepper. Serve hot.
