Banana Blueberry Lemon Muffins

I have to admit that I'm very particular about what I look for in the perfect muffin. Sadly, most of the muffin recipes I've tried over the years have produced dry muffins. So, I spent some time working on my own recipe. I find that bananas work well for making muffins moist. Blueberries give the muffin some sweetness and a little lemon gives it a fresh taste. These muffins are light and fresh tasting without being too sweet. The top is crunchy and the center is very moist. The perfect muffin!

Makes 12

Ingredients:
2 1/4 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 large ripe bananas, mashed
2 eggs
2/3 cup brown sugar, firmly packed
1/2 cup butter, melted
1 tablespoon vanilla
1 tablespoon lemon juice
1 cup blueberries
2 tablespoons grated lemon rind
3 tablespoons sugar





Directions:
1. Preheat oven to 375 F. Lightly grease muffin tin.

2. Combine flour, baking powder, salt, cinnamon and 1 tablespoon of the lemon rind.

3. Beat together bananas, eggs, brown sugar, butter, lemon juice and vanilla until blended.

4. Stir in dry ingredients until blended. Stir in blueberries just until combined. Spoon into prepared muffin cups, dividing batter equally.

5. For the topping, combine sugar and remaining lemon rind in small dish. Sprinkle evenly over the muffins.

6. Bake for 25-30 minutes or until golden.

I love to bake and bake quite often. I had bought some blueberries that were soft, so i put them in the freezer till i found this recipe . I wanted to give a huge high five to these muffins. They are moist, flavorful and the crunchy top adds so much to the muffin. The only thing i found was my muffin cups stuck to the top of the sides alittle because of the sugar on top. but who cares they were delicious great recipe thank you!!!!

Just made a batch with my fresh blubberries and aging bananas...made about 16 hearty muffins and it was yummy!! I did add 1/4 cup of milk and with the lemon juice...it might have turned it into some buttermilk...either way it was a good recipe with great flavor! Thank you for sharing!

The recipe turned out perfect! I used half whole wheat flour in the recipe and didn't pack the brown sugar and they were delicious!

Curious - could I use frozen blueberries in your recipe? I have made blueberry lemon muffins before using frozen berries - and they've turned out very moist. Right now, it's not quite blueberry season here in Quebec - and I'm wanting to make these muffins for a sailling trip this w/e (in a race - figure these will keep me and the crew happy when we need something to nosh on as we sail).

Just popped these in the oven, made them with my 22 mth old daughter... I did substitute half whole wheat flour like one of the other posters said. And I used about a half cup of honey instead of the brown sugar. We went blueberry picking earlier this summer and the farm also harvested their own honey - I like the idea of local ingrewdients - will let you guys know how the honey turned out!!!!

Fabulous recipe, these muffins are irresistible! I made a few alterations: only one banana (thats all i had), half spelt flour, a few extra blueberries, and a handful or so of shredded coconut and 1/2 cup of liquid sweetner (honey maple syrup combo) instead of sugar. I will definitely be making these muffins again, and again, and again, Thanks!

This worked out very well. My kids were all over these muffins, and my older one said that if she had to choose between pizza or these muffins, she's choose these muffins. It IS a complement :) I did not have any blueberries of any kind, so I used dried currants. They worked out just fine. I also used coconut oil instead of butter.

I just made these and they were FAB! I used frozen marionberries from last summer, and the lemon made them really POP! I love the lemon sugar on top, too! These are my new favorites! Thank you for the awesome recipe!

Just a Tip for all the Blueberry Comments - They can be Frozen!! I buy them when they are on sale, throw them right into the freezer in the containers they are purchased in and then allow to thaw before using! =) I've never had any issues!

Frozen blueberries often work better. They are generally picked at peak ripeness and frozen right away to preserve the ripeness. I’m a professional baker and I almost always use frozen blueberries :)
