Brussels Sprouts With Bacon And Lemon Zest
Serves: 3
1 lb. Brussels sprouts, trimmed and quartered
4 strips bacon, sliced crosswise into 1/4-inch strips
1 lemon, zested and juiced
Salt and pepper
Olive oil
In a sauté pan over medium heat, add 1 tablespoon olive oil, bacon, and Brussels sprouts. Cover and cook for 20 minutes, turning occasionally. When Brussels sprouts are nicely browned, add lemon zest, juice, and salt (just a bit because the bacon is salty) and pepper. Toss and serve
